Description

Honey is a complex, solution of saccharides with low water content resulting from the action of the enzyme invertase on sucrose, which creates other dissaccharides and polysaccharides. Other components include the enzymes themselves, organic acids, and minerals, all of which contribute to the flavors and preservative properties of this energy source. A UHPLC-CAD method uses HILIC to separate over 30 components of honey in 45 minutes.
