Description
Peanuts contain the digestible carbohydrates sucrose, fructose, and glucose, but they also often include non-digestible raffinose, stachyose, and verbascose in varying quantities that pass through the human digestive tract unchanged and are subject to fermentation in the lower gut. For determinations of carbohydrates in food, a method for carbohydrates in peanuts and peanut butters with minimal sample preparation and without requiring pre- or post-column analyte derivatization.
